Not at all Scott.....hoping to get a couple more fishing trips with ole Griz, maybe a halibut trip. Our deer season starts in a couple days and is bucks only for the first month......then anything goes. Not sure I will get an early hunting trip this year but will definitely chase another fish or two....

Déjà vu! I just got home yesterday from the area posted in Trevor's Photo's and the State he lives in, is even more Beautiful in Person. If you appreciate the Beauty of Mother Nature, it really is a Truly Magical Place.

Trevor, you sure have gotten that knife off to a good start! OH

Was able to get out this morning for a quick halibut trip. Caught just one at about 32lb.......Rick didn't get one today. Was another excellent day here, and especially nice on the water. Managed to get this fish at about 23 fathom (140ft). Noticed something was working my bait and grabbed the rod to check......nothing there, so took a couple slow cranks and then let it back to the bottom (just a few feet).....another couple slow cranks and a couple jigs and he took the bait hard, always fun to get a fish that can fight a little. He made one good run and tried again after he could see us and we could see him, we decided he would fit the net and just scooped him......bigger ones would be shot and/or harpooned rather than netted.

One of the State Ferries went by and we had a few eagles in the trees near us. A sea lion was fishing very near and making all kinds of noise and tossing coho around, never gets old watching the wildlife here. A young eagle was on a large rock on the small island close by and then took to one of the trees when an older eagle vacated........wasn't long and the older bird was back and jr. had to give up his tree. Got a couple pics of the eagles but was zoomed in too far for very clear pics. The younger bird was just starting to get some white on his head and was on the rock grooming himself. Gulls and 'chit' ducks were around too, didn't see any whales today but saw quite a few when we were salmon fishing two days ago, the tour boats were flocked around them pretty heavy and they were breaching and blowing.....always a thrill.

Griz did a fine job for Rick on half of the halibut and was also used for general cutting chores on the boat. Like I said it was a quick trip (4.5hr total) and we just ended up with the one halibut. Rick caught a half dozen 'double uglies' and one small rock fish. The rock fish can be seen on the fillet table in one of the pics. May do some more crabbing in a few days and will put ole Griz to the test cutting bait for the crab rings. I really like the knife and it feels good to get some blood on him.

That Halibut looks fantastic Trevor, it would go for over 20 bucks a pound to me if I were to order it in for the restaurant! How are you going to cook it up?

Brian.....I sincerely hope you get a chance to fish in Alaska, better than 'World Class'......it's really in a class of it's own!!

Mike.....will probably BBQ a couple chunks tonight, sauté a few pieces in butter and a little oil on real low heat with just a little bit of tarragon (my favorite herb for fish) and a sprinkle of dill. Halibut is meaty but mild and will hold up to a bit of salt but not much pepper imo. It also goes from perfectly cooked to overcooked faster than almost any other protein so have to watch it closely. I have a couple other good recipes for halibut and like it beer battered, but that is usually after some more conventional cooking applications. One that is quite good is to take equal parts of mayo, sour cream and grated cheddar and mix that up....place chunks of halibut in some melted butter in a baking dish, lightly salt and pinch of pepper and then top with the mayo mixture.....bake it up and man is it good, very rich and buttery. Some don't like cheese to get near seafood but that recipe is a least one exception to the rule. Halibut chowder....steamed with veggies in foil.....the list goes on, need more fish!!

Trevor all of those Halibut preperations sound tasty to me....being a Wisconsin boy the cheddar topping seems like a real natural!
Do you save the cheeks? Those are always especially expensive...and tasty. I did a dinner a few years ago where I put salt and pepper on the cheeks and seared them in a hot pan like a sea scallop...then set each one on top of a yukon gold potato hash brown circle..topped each one with a small amount of fresh corn & tomato relish and drizzled each one with a small amount of lime cream (just sour cream thinned out with fresh squeezed lime and half&half). Served it up on individual small plates as sort of a stack typed of deal, people loved it.

Yeah Monk.....you would go crazy fishing around here, we get all five salmon runs, the very best bottom fish and all the best crab. Clams, mussels....etc, etc, always some kind of fishing happening here. Got the smoker going as we speak, with the Coho from two days ago. Will post some pics of the finished product later or tomorrow.

Mike....that dish you made sounds AMAZING!! I do keep cheeks when there are enough decent sized fish to warrant it. Our local Costco sells packages of just cheeks sometimes and the wife has picked those up a time or two. Excellent flavor and texture.....a real treat and highly prized part of halibut for a lot of folks. Your preparation sounds spot on, they are kind of similar to a scallop.

Here are a few of the pieces of smoked salmon that just came out of the smoker. Used Griz for chunking up the fillets into strips prior to smoking......I am really liking this knife. It's holding an edge quite well, has a nice grind and very user friendly feel in the hand. The saltwater seems to be drying the stacked leather a bit.....been applying oil to it, hope that's OK with Scott. May be a little darker color to the handle when it leaves Alaska....

Nice halibut pics, eaten lot's of it as my brother-in-law goes halibut fishing a couple of times a year, never seen one being cut up before.

Sweet first test!

Took ole Griz out again....putted along the shoreline early in the day but didn't spot any deer. Went across Saginaw Channel to a spot near Admiralty Island and did a little halibut fishing. We ended up with 4 little 'chickens' and called it a day early. We were on the dock filleting the fish and an older oriental guy asked for the heads and we set them aside for him.....couple minutes later another guy asked what we were doing with the carcasses cause he needed additional bait for his crab pots. Griz made real quick work of separating the heads from the bodies using a gap between the dock planks for a blade guide of sorts. Nothing is slowing the knife down even a little bit so far.....planning a crab trip and another skiff hunt in this next week. Will be ready but reluctant to send the knife on when Scott gives the word. Nice knife and lots of fun getting to use it some.....
