I've used a variety of knives to field dress deer. I'd suggest a Buck 110 or Buck 112 or perhaps one of the other well made lockback knives available like a Uncle Henry LB7 or a Case Shark Tooth, Mako, or Hammerhead. They will all get the job done.
Good ideas Phil. I was going to suggest avoidance of fixed blade knives. I used a Geber Magnum Folding Hunter for many years and it worked out fine. I'd also suggest that you have a hunting buddy who has some experience standing by. My son, who I was able to take on youth hunts many years ago though I never got to hunt, has continued hunting and is teaching me a lot. That Marbles is beautiful.
