Carving on Bones

Hey fellow carvers,
I have a large supply of cattle leg bones from a cow skelaton that is a couple years old. I would like to try to carve on one of them. Have any of you ever tried to carve on one? If so would you use a knife or a chisel? thanks for your help.

I've never done it, but I've always wanted to try some scrimshaw. Carved ivory can look amazing when finished.
