Anyone Know How to Describe This One?
Trying to sell this on ebay and have NO idea what it is. I googled "long skinny pocket knife" and found some knives called "melon knives" which seem pretty similar. Is that what this is? A melon knife? Any thoughts on date of production?

Correct. AKA a melon tester. Made for cutting a "plug" from a melon.

Some times they are also called fruit knives (like in citrus fruit) and also I seem them referred to a sausage knives a few times.

Also called a sausage knife. Most have advertising imprinted on the handles related to the food industry. Some are two bladed and have a serrated secondary blade.Most have no bolsters but some have one or both bolsters. I have one that has three blades;the third one being a tiny folding fork that rests in the opposite end.I don't see many made in Europe;most are made by either Schrade or Colonial in the USA.Collectability isn't real high but they are interesting knives.

Utica Kutmaster still makes them. I have one somewhere with a seed company's logo on it, that came "free" with my seed order shipment a couple of years ago.

I too have seen these called sausage knives. I see them around our area at flea markets with the name of our local meat packing company from back in the day "John Morrell" in advertising. I actually did carry one of those back in my younger days. When I used to wear the tall "Dingo" boots back in the 1970s, I fashioned a carry space between the outer leather and lining at the top of the right boot to slip one of these into.Steve Warden wrote:I have two, but I've never carried either one.
