New Swell Center Jack

Former Schrade President Walley Gardner and principal Joe Hufnagel joined with nine master cutlers to form a group of US craftsmen with over 300 years of combined knife making experience to create Canal Street Cutlery. It was first located in upstate New York where a long and rich tradition of quality knife making dates back to the 19th century. Unfortunately, the company closed its doors in 2015, but not before making some great knives. The brand was resurrected in 2018 as Canal Street Cutlery Co-Op & focused on making very small batches of high quality traditional knives. As a Co-Op, it was owned by the knife makers who worked there. Unfortunately, the business model couldn't hold up & the entity again ceased production.

New Swell Center Jack

Post by D.P. Hunter »

Just letting you all know that I was in the factory this morning and the first 25 Swell Center Jacks in Amber Stag Bone are completed - just awaiting their seals and numbers. I was promised that I could pick up my first order tomorrow. If you saw the prototype/model at the Blade Show you know that this is a beaut!

Oh - Brass Liners, D-2 Tool Grade Steel Blades, and heat-treated stainless steel liners that follow the swell. The Butt is a particular thing of beauty.

Just picked this one up from Mike's shop, what a unique design, it's a beauty!!! Great fit and finish, springs are just right, and it's SHARP! ::tu:: ::tu::

It's a real treat to see an actual brick and mortar knife shop for a change, hasn't been one around here in years. Good luck to ya Mike! ::ds::

I really like the sound of that! Gotta get me one or four of those. You sure got it right when you said it was sharp! In more ways than one. Thanks Eric.

Why is it called a jack now?

In the older days a knife like this one was 4 1/4" swell center was called a hunter. To day a 4 1/4" swell center is called a cokebottle.

What makes this a reversed swell center a Jack?

Who is Mike's shop???

Ken, Mike's shop is droppointhunter.com, which is also an actual store over in Pine Bush, NY. Speaking of which, to answer Boggs' question I think he's expecting some pearl examples of this model around August 14th if I read his announcement correctly ::tu::

Most knives with the blade or blades hinging on one end only are referred to as a jack. The names were added to distinguish between styles, like teardrop, barlow, serpentine, toothpick, equal end, swell center (Schrade referred to this pattern as a balloon pattern jack).

The hunter pattern and cokebottle looked more like these (Schrade - hunter, Ulster - cokebottle):

Boggs,

We will be coming out with a pearl version of the Jack ~ but it's proving to be a challenge. This Jack will need major pieces of pearl because of the swell center and length - and the butt may need to be slightly modified too. The preliminary handles are looking pretty nifty though. We will post it on our site as soon as they are out.

Jeffrey, I believe they have a number of sources, some of which supply solely to the knife industry. Some of their covers (they're not scales), such as hardwoods (osage orange, chestnut, mesquite, etc) old red bone, possibly the sunset bone, are done in-house.
