Wow, what a great display of paring size kitchen knives. You have a diverse group. I bet there are hundreds of pattern varieties in the size of kitchen knife. I have a Dexter and a Warthers paring knife.
Has anyone used a Warthers knife ? They had a reputation as an excellent knife but was this marketing or does their hammered steel actually edge hold better than other parers ?
Thanks for starting this thread Ray.
No Swedish paring knives ?

I use the Warther's frequently and it seems to hold an edge very well. I bought it in an antique store for $2 used. As for Swedish paring knives;do these count?

Re: Paring it down...........
my wife has grapefruit knives and see them in thrift stores. My mom served the juice at breakfast. Hate the taste of it! just a little glass and drank it fast. probably was the little glasses that jelly came with the pry off covers in in the 1950's or often now called swanky swigs.

Re: Paring it down...........
Here's a few from my kitchen. All these knives are in use.
1) 6 3/4" "Pontus Holmberg" "Sweden" and on the back side: "Stainless/Williams Cutlery/Made in Sweden". Williams Cutlery i believe was in Sonoma California. I bought this from the wife of a deceased knife collector who said he likely bought this in the mid-late 1960's.
2) 9 1/2" Pontus Holmberg Sweden Stainless. Not sure of the intended use but could be grapefruit.
3) This is my favorite. It's heavy duty, 8 1/2" saber grind blade marked "Sweden/ORR & Lockett/Hdwe. Co./Chicago".

Re: Paring it down...........
Here are a few more Swedish paring type knives:
5 3/4" "P. Holmber/Eskilstuna" "Sweden"
And a 7" "Edward Zinn/Sweden"
Ans, 6 1/2" "El Gallo Sweden" "El Gallo" (The Rooster) was a trademark Schlieper used for knives going to Central & South America. I assume Schlieper had this knife made for them in Sweden.

Re: Paring it down...........
Beautiful ones Roland! That Holmberg with the serrated blade is very unusual and could very well be for grapefruit although most grapefruit knives are thin and flexible and are serrated on both sides and sometimes the blade tip is bent at an angle to facilitate lifting out the segment after it has been separated.
Here are some examples of grapefruit knives I have including one that is very unique:
The double blade has one that is bent and serrated on both sides and the other that is actually two very thin blades fitted together. They are designed to slip over the divider of the segments and cut on both sides simultaneously .When all the segments are separated the opposite end is used to lift them from the fruit.
