My kitchen hardware is quite simple. I have a large hand made butcher knife that I bought at a yard sale for a quarter that I use for just about everything;an old Clauss aluminum handled bread knife(I buy farmer's French bread locally uncut);a set of English steak knives I re-handled in stag when the faux pearl scales dis-integrated; and an LF&C stag carver set for holidays. My wife has a small assortment of knives(mostly Wusthof)that she prefers using that are mostly new.

An unusual carving knife. 15.75 inches overall.I tried and tried for half an hour to provide a scan that AAPK would accept but couldn't be done. This has been an ongoing problem; the image rules are not nice. I finally got it to accept this poor one. This is really a remarkable knife; sorry you couldn't get to see it properly.

That looks like a nice knife, Cal. What does the stamping on the blade say?

Joseph Eliott made some monstrous knives. I have one that I had to turn sideways on my graph board to photograph it.
I find that if I frame the picture with the point of the knife in one corner and the handle in the opposite one and using the macro setting on my camera(A Canon PowerShot 100);standing back a bit and zooming in until the image fills the frame works best.

Shocked there's no CUTCO posts in this thread.

My favourite pair!

Bought these MAC knives 19 years ago in San Fransisco Chinatown, on our honeymoon trip.

Been with me at work and at home and will be with me for as long as I can manage to hold a knife.

My wife bought a set of those a few years ago and she hid them somewhere. Except for the shears. They are in the kitchen and they are KNICE!

Speaking of CUTCO;I found these at a local flea market last year. Tried to find out from them when they were made but they couldn't tell me. Two different sizes of knife rests.
