I have been asked to share my recipe for Oyster Casserole. It's pretty simple but my family has been enjoying this dish at holiday dinners for generations.

Ingredients:

Saltine Crackers
Fresh Oysters (1 pint or more)
Real Butter
Half & Half
Salt

The photos show a double batch but I'll give directions for a single batch made in an 8"X8" glass baking dish.

Spray baking dish with Pam or coat with a thin layer of cooking oil.
Crumble saltine crackers until you've covered the bottom of the baking dish completely.
Add oysters spreading them out evenly. I like to cut them into smaller pieces for more even distribution.
Cover this with another layer of crumbled saltine crackers.
Add a second layer of oysters.
Cover these with the third and last layer of saltine crackers.
Pour liquid from oysters over the casserole.
Salt lightly.
Add pats of butter (for goodness sakes, not margarine) over the top of the casserole.
Pour half & half over the casserole until the half & half is nearly to the top of the crackers. (Don't pour half & half above top of crackers.)
Bake at 350 degrees until crackers turn brown (about 40 minutes)

Sounds really good, Phil and I am going to try it. I showed it to my chief cook and bottle washer but she kinda draws a line at oysters. I tried to explain to her that she has no idea what oysters might taste like but she wasn't buying. Sometimes women are just closed-minded about things. :lol:

I tried the oyster casserole and really enjoyed it. My bride has a 'thing' about oysters and she enjoyed the crackers. :lol:
It is worth noting that on my 1st bite I bit down on a pearl! :lol:

I saw where there were a couple of other chili recipes earlier in the thread, but I figured I'd add mine since I have a pot cooking as I type. The 2nd day is always better, so I have taken to cooking a pot up the day before I want to eat it. :mrgreen:

I call it "Momma's Chili" as this is how she CURRENTLY makes it. It has evolved over time as she tries different combinations of spices. She adds flour because she likes a thicker chili gravy.

4# lean ground beef 3 to 4 T Chili Powder ¼ tsp Garlic Powder
1/3 C Flour 1 tsp Salt ½ tsp Black Pepper
1 T Cumin 1 46 oz can of Tomato Juice ½ T Sugar
½ T Oregano 1 T Paprika

1. Saute ground meat 1# at a time with garlic powder until meat is brown. Put each batch as cooked into slow cooker pot.

2. Add Cumin, Chili Powder, Salt, Flour and Pepper. Stir until combined evenly. Add tomato juice and stir.

3. Cover and place on electric base. Bring to a boil on HIGH for about 1 hour. Reduce heat to LOW and simmer for 4 hours.

4. Serve with pinto beans and cornbread ON THE SIDE.

5. Remaining chili may be frozen for later use.

6. Makes 12 to 16 Servings (How big is your bowl?? :mrgreen: )

Note: True Texan Chili does NOT contain beans. If you choose to put beans IN your chili ::teary_eyes:: , you are NOT a Texan.

If there's any interest, I can put all of these recipes in a cookbook style document and make it available via a Word document or a PDF file. I have a recipe program that makes importing and formatting recipes fairly easy and the output is pretty nice with a table of contents and an index.

Mr Phillip, we will fried the oysters in fresh ground corn meal, then stuff the shrimp with jumbo crabmeat and cook on the grill, along with cold slaw, hush puppies and cold sweet iced tea. ::tu:: ::tu::

Looks like a feast to me! Fresh gulf oysters would never make it to the cooker if it was up to me. A little red sauce and some saltines is all that's needed. A cold beer to wash it down is a nice compliment.

After Christmas meals and lots of company, Miss Joy said she'd like to have a quiet New Year's Day. So she prepared us a traditional New Years dinner. It seems to be such a big deal for folks to eat certain foods on this day. Lots of superstition turned into tradition. :roll: While we were eating, I mentioned the items aren't really special but the fact they all appear on the table at one time is special. We have blackeyed peas, rice, greens, rutabagas, corn bread, bacon, smoked hog jowls or some pork product pretty regularly through out the year along with a glass of sweet tea and a jar of home made pickled peppers to dress the greens. This time we had a pot of cabbage and also some left over turnip greens. It was all good, no dessert, fixin' to get that long winter nap since it's 39 degrees outside.

Looks great Phillip! We had a similar situation. After a gathering of 21 family members here for Christmas, New Years Day was just my wife, my sister (she's a widow) and me. But we had a new year's traditional feast of baked ham, black-eye peas, cheese grits, sliced tomatoes, pickled okra, and cornbread with iced tea. And bread pudding for dessert. ::super_happy::

Sour Cream Potato Soup

Ingredients:

8 cups red potatoes, peeled and diced
1 cup chopped sweet onion
1 cup chopped celery
1 cup chopped carrots (I buy a bag of shredded carrots and chop into small bits)
6 cups of water
4 chicken bouillon packages or cubes
(You can also just use 6 cups of chicken broth instead of the above)
4 cups of whole milk
4 Tablespoons flour
6 tablespoons real butter
1 16 oz carton sour cream
4 teaspoons salt
1 teaspoon black pepper (or more to your taste)

Directions:

Cook potatoes, onions, celery and carrots, covered, in water (or chicken broth)until tender
Add milk, butter and chicken bouillon (if you did not use chicken broth)
Mix sour cream and flour with a little milk (I use heavy cream) in a separate container
Add to the soup mixture and stir constantly to break up clumps and allow to thicken
Stir in salt and pepper
Heat to piping, but do not allow to boil!!

May top servings with crumbled bacon and/or a bit of shredded sharp cheddar cheese

Probably not very dietary, but it's the best potato soup I've ever eaten. Not my recipe. Sarah picked it up at The Southern Women's Show a couple of years ago.

Charlie Miss Vicki made the Sour Cream Potato Soup today and it was my supper this evening. I have to say it was EXCELLENT and anyone who hasn't had it has missed out on something wonderful. ::tu:: Oh, by the way, I liked it. :mrgreen:

Over in another thread, I mentioned the making of a bread pudding with bourbon sauce that we were making for a Master Gardener function. I was asked for the Bourbon Sauce recipe by one of our own who really likes bourbon sauces.

I decided to make the recipe available for everyone.

Momma Z’s Bourbon Sauce Recipe

1- 12 oz can of evaporated milk
1- Cup whole milk
3 - T corn starch
1 – Cup of Sugar
¼ - Cup of Bourbon
2 - T Butter

Mix milks and sugar. Heat until scalding (180ºF) Mix corn starch with enough water to make a thin paste. Add to milk/sugar mixture. Cook on a low heat until sauce thickens. Remove from heat and stir in bourbon and butter.

Serve over bread or rice pudding, either hot or cold.


While this sauce is good right off the stove, it seems to get better if refrigerated overnight.

Today in Bulgaria is celebrated the day of Saint Trifon - a feast of the winemakers and winegrowers. This is a very ancient holiday, pre-Christian, connected with the Thracian gods Sabazius, Zagrey and Dionysius. Friends, drink on this day a glass of red wine for health!

Classics in Bulgaria. Hot sandwich "Princess". Very fast recipe for breakfast, lunch or dinner - it takes literally 20 minutes.
Products:
250 grams of mince
150 ml of milk
about 100 grams of yellow cheese - shredded
Spices - black pepper, cumin, savory, chilly, oregano ... whatever you choose.
Mix all this in a bowl, smear slices bread and bake in the oven.
Enjoy!

Wow! What a resource! Here is how I do my GUMBO and I dassn't get ANY complaints.
3/4 cup oil
1 cup flour
In largest iron pot
45 minutes or less to chocolate brown (a two or three beer roux, if ya know what I mean)

1 1/2 cup onions
1 cup each bell pepper and celery
Until slightly softened

2 pounds meat, especially chicken and kielbasa, maybe venison
2 quarts liquid, especially my home-made chicken or shrimp shell broths
Cajun seasoning (my home-made, without salt), salt, bay leaves
Short cooking time

2 pounds shelled raw Shrimp, and maybe okra
Very brief cooking time

At table:
Scallions
Parsley
File powder
basmati rice
