In Bulgaria, households in the villages still raise 1-2 pigs for personal consumption. In every village there is one or several "kolach", butchers. The sticking of a pig, which is usually around Christmas, is a whole event in itself. The butcher and relatives are invited to help. The butcher takes the lead in sticking and cutting the pig, while the others help out. A traditional dish is prepared, fat belly pork with fermented cabbage. Various salamis, blood sausage and preserves are made. Of course, different pork parts are constantly being seared on the grill and wine and brandy are constantly being poured. I've been to such events, it's not easy, I go home tired, overfed and slightly drunk at the same time,
Well, a butcher ordered me a knife and this is the result.
