PATTERN:   Scimitar, also called a breaking knife or a steak knife by some meat cutters.

BLADE ETCH:   WINCHESTER/TRADE MARK/MADE IN U.S.A.

BLADE LENGTH:   10”     

HANDLE:   Full tang wood slab handle

CONDITION:   Very good

DAMAGE:   Wear, dings, surface rust. See pictures.

ADDITIONAL INFO:     I know little about Winchester knives and even less about the kitchen knives. Looking at the blade the heel of the blade is forged in the bolster is not forged and the tang is a hidden and the handle is held on by a square nut. The knife manufacturing portion and an in and of Winchester began in 1919 and ended about 1942 with the start of the 2nd World War. Winchester began by purchasing Eagle Knife Company & m Napanoch cutlery. In 1922 Winchester merged with an E. C. Simmons hardware company in of St. Louis Missouri and moved their operation from Walden New York to New Haven. In 1929 Winchester-Simmons dissolved. In 1931 the Western Cartridge Company purchase Winchester are some. They continued to make an cutlery until about 1942. (See Goins’)

A scimitar knife is often used by meat cutters as a breaking knife, the knife they used to break down a beef carcass into manageable size pieces to cut up for the customers. It is also called a steak or staking knife because they often use it to slice large steaks and roasts.

 

The last picture depicts the scimitar next to a Winchester 17 inch chef knife. I believe the chef knife is much earlier than the scimitar as the chefs knife as a hidden tang with a forged kick. I do believe that blade is forged and this knife probably is not. I believe this slab tang knife was made much closer to the time when Winchester ceased making knives, circa 1942. I think this knife was probably made right about the beginning of World War II. In 1942 Winchester stopped making knives to focus on munitions for the war. This is a nice piece of carbon steel it should clean up quite well, something I will leave for the new owner to do if they so desire.
