Help identifying some Euro knives

My wife's grandfather passed away in November. I enjoy looking through his knife roll. He purchased quite a few knives from Hoffritz when he lived in NY. These particular knives have caught my interest, but I have no idea what they are. The first is one of my favorites. All I can make out is France and Hoffritz. There's more but I can't make it out. The second just says INOX. Pretty vague. I believe the third was marked Jaguar Solingen and/or Germany. I don't have it in front of me and I can't remember exactly.

Any help is appreciated

Also if you can't tell from the not so great pictures the first two have horn handles.

the first look like a Mongin (trademark) Yatagan (for the model) - any mark on the blade ?
Mongin his a knife workshop in Nogent (France)
